Details:

Do you want your steak to moo at you as they set the plate in front of you? Or do you want it cooked until it's almost crispy? Or somewhere in between?

was at my cousin's house when I was about 12.  I politely took it...and then began to feel like I was choking.  I couldn't chew it and swallow it.

 

To this day, I cannot bear the looks of mooing or even pink steak because I fear the thought of choking. 

 

So, I want my steak to have no pink on the inside.  If it isn't done enough for me, I put it back in the microwave.  But once a friend of mine wanted her steak almost crispy and asked me to put it back in the broiler...it wasn't a bright idea...we needed to call the fire department because the grease from the steak started to burn and the flames came out of the top of the stove.  The fire ended before the firemen came into our smoky kitchen...and the steak was immolated....and, my friend ate it anyway!  C'est la vie!

 

  As my friends call it...gray steak!

"Crusty outside, pink inside"

I want my steak just barely warmed through but still pink.  It doesn't develop any more flavor by cooking it longer, but more cooking will squeeze juice out of it.  I'd even prefer it on the red side of pink.

But the outside should have a nice crust.  It should be dark brown, playing chicken with being burned but not getting there.  That nice brown crust is full of wonderful flavor, but since it's just on the outside it doesn't cook much moisture out of the steak.

The secret, therefore, is a hot fire, and that's hard for most home cooks to achieve.  You really can't get it on a gas grill, though you can get near there if you preheat the heck out of it.  Charcoal is good, but actual wood charcoal burns hotter than briquettes.  Briquettes burn longer, which is good if you're making something nice and smoky, but you sacrifice some of the crust.

If you want smoky flavor, too, you need to add some soaked wood chips and use a very thick cut.  You get your crust on the outside directly over the hot coals, then transfer the steak to the cool side of the grill and cover it.  That lets it pick up smoke flavor while it heats through.

I ask them to walk my plate quickly through the hot kitchen. I also like steak tartare (or cow sushi as we call it...). I don't eat that much red meat anymore but when I do indulge, I want it just right. To me the worst thing you can do with steak is cook it until it is grey... such a sad waste. That said, I'm having a Greek salad for dinner tonight...

You don't need no stinkin' cookbook! Coat the outside with garlic and marjoram, let it sit a bit and grill it! Serve with a good Pinot Noir (David Bruce would do nicely)

i love my steaks medium rare.  i don't like a food to make sounds at me.  so, any steak that goes moo i will go boo.
