Details:

I need to use real coffee beans for a project, but I don't want them smelling up the room they will be displayed in so I need to find a way to get them not to smell

You might try plastic bags, like Glad with zipper lock. It's suppose to contain any odors. If that doesn't work, try Reynolds wrap, although that could get messy if you fold it the wrong way and have to end up ripping it away. I'd go with the Glad bags.

If you spread the beans out and let them sit in a sunny, well-ventilated area long enough they will eventually lose their smell (maybe not entirely, but enough that they won't smell up a room). If you don't want to leave them sitting out for 1-2 weeks, you can try soaking them in a solution of baking soda and water for 10-20 minutes.

You could even do both. Soak them for a while and then let them sit out for the rest of the day. Repeat this every day until the smell is completely gone (or gone enough, at least).

Most people use coffee beans not only to drink but to tka ethe smell out of other things, that is why you see them at parfum counters to remobve the smell fromyour nose and hands. I supose you could wash them in cold soapy water to remove the oils and then leave them to dry in the sun for a while and that will make them less fragrent.
