Details:

my nephew's 29th birthday is coming up and I need a recipe for a birthday cake. He can't eat any dairy at all (eggs are ok). He becomes totally sick to his stomach and none of the lactose intolerant supplements help. I'd like to make him a nice birthday cake. Help?

"Go kosher"

A good place to go looking for dairy-free cakes that still have eggs in them is to look in kosher recipes.  Vegan recipes are also good, but they don't eat eggs, and it's really difficult to get a good cake texture without eggs.

Here's one recipe, from a kosher cookbook:

    * 2/3 cup cocoa
    * 2 1/4 cup flour
    * 2 cups sugar
    * 1 1/2 tsp. baking powder
    * 1 1/2 tsp. baking soda
    * 3/4 tsp salt
    * 1 1/2 tsp instant coffee
    * 3 eggs
    * 1 1/2 c. orange juice or water (or a combination)
    * 3/4 cup unsweetened applesauce
    * 1/4 cup canola oil or 11/4 cup oil

Combine all dry ingredients in a large bowl. Add liquid ingredients.  Beat until smooth with an electric mixer.

Pour batter into a well greased and floured 10" tube pan, 12 cup Bundt pan, or two 9" round pans. Bake at 350 for 55 to 60 minutes (45-50 minutes for the layers), until cake tests done.

Cool for 20 minutes before removing cake from pan.

Double Layer Birthday Cake

3 cups cake flour
1 3/4 cups sugar
1 1/4 cups water
1/2 cup shortening
3 T. water, 3 T. oil, 2 tsp. baking powder; mixed together
2 1/2 tsp. baking powder
1 tsp. salt
1 1/2 tsp. vanilla extract

Preheat oven to 350 degrees. Grease and flour two cake pans. In a large bowl, combine all ingredients. Using an electric mixer, beat until well mixed, approximately 4 minutes. Pour batter into cake pans. Bake 40 to 45 minutes, or until toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks. Frost when completely cooled.

Note: Baking powder is intentionally listed twice in this recipe. The combination of 3 T. water, 3 T. oil, 2 tsp. baking powder; mixed together is the substitution for 2 eggs.

Cocoa Frosting

1/2 cup milk-free, soy-free margarine, softened
1/2 cup Hershey's® unsweetened cocoa powder
2 2/3 cups unsifted confectioners sugar
1/4 cup water
1 tsp. vanilla extract
Beat margarine on medium speed in large mixer bowl until softened, about 1 minute. Add remaining ingredients. Beat on low speed until ingredients are moistened. Beat on medium speed until creamy.

  3. Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted in center comes out clean. Cool on a rack.
