Details:

I read the Wikipedia entry on Dragon and am hoping for a recommendation for a book that explains the mythology, physiology, history or origin of dragons around the world. I know of "Dragonology" but it's children's fiction.

I think you meant something other than what you wrote. How can you have a non-fictional book on a fictional creature? No such thing. BUT! Here are few I know of:

 

Dragonology Handbook : A Practical Course in Dragons (Ologies) by Dugald Steer . This is your path to becoming a certified Dragonologist and a member of the S.A.S.D. (Secret and Ancient Society of Dragonologists). 80 pages.

DRAGONS, A Natural History Karl Shuker , Simon & Schuster . A very nice book about the history of dragons. Dr. Karl Shuker is an actual Dracotologist! 120 pages.

Dragons: Truth, Myth, Legend David Passes, Ill. Wayne Anderson. Well, the title says it all, covers the history of Dragons. 41 pages.
