I say this is the best way you won't get sick.

If you also do not want to get sick, then I suggest you eat the sushi with wasabi and shouga(ginger, the pink or white thing that comes with sushi)

wasabi and shouga helps to kill the germ?bug? the raw fish has.

Also, the dark, dark, extra dark green tea will help kill the germ?bug? too.

My brother works for publix supermarkets. He works in the meat department. They throw away their sushi after every day due to its shelf life. If you cant sell it after 24 hours, then it isn't fit for consumption. I'd only say its good for ONE day after made. I'd only buy what you can eat within 24 hours. Hope this helps.

Sushi is a highly perishable product so it should be eaten within 24 hours. It could possibly last a little longer, but food poisoning from fish is really awful. It's better to be safe than sorry.

Sushi was invented to preserve fish and rice using three preservatives; salt, vinegar and sugar. In old days sugar was not used in the sushi rice and salt and vinegar was the main ingredients making sushi rice for preservatives. Nowadays to much sugar is used for sushi rice in most of the sushi restaurant and it is not pleasant and ruins sushi even though you have very fresh fish.
I recommend not putting your left over sushi in refrigerator because somehow rice get hardened and sugar and salt mixture molecule changes rice texture over night once it is cooled.
I recommend my clients to place sushi in cool place and make sure that container is absolutely air tight. Sushi rice must be the body temperature when eaten, just to remind you.

unfortunatly, I know from expierience that if it has real fish in it that's the max, but if it's fake sushi, (cooked fake crab and avocado w/ rice or that kind of thing) it can last up to a week, as a rule of thumb, if it's stinkey, don't eat it
