Details:

I used to do bird rehabilitation, so I remember how to do the splint, but I can't remember how long I need to leave it on.

Sorry this answer was so late in coming. The idea is to keep the splint in place until the leg is sufficiently healed, which of course you know. The amount of time is going to vary, and though I don't see any specific times listed for doves, one site suggests that canaries should be left in splints for at least two weeks. Doves tend to be a little larger so I'd guess an extra week would likely be indicated.
