Persimmon Cookies

  • 1/2 cup shortening
  • 1 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 1/4 teaspoon salt
  • 1 cup persimmon pulp

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the shortening and sugar. Add egg and vanilla; mix well.
  3. Sift together the flour, baking soda, baking powder, 1/4 teaspoon salt, cloves, cinnamon, and nutmeg. Stir flour mixture into creamed sugar mixture.
  4. Stir in the raisins, chopped nuts, 1/4 teaspoon salt and persimmon pulp; mix well.
Drop by the teaspoonful on greased or parchment lined cookie sheet. Bake for 12 to 15 minutes. Transfer to wire racks to cool.

I assume you mean a recipe for persimmon cookies, not an entire cookbook!  If so, here is one:

Persimmon Cookies

2 large ripe persimmons, peeled and coarsely chopped
1 cup sugar
2/3 cup vegetable oil
1 large egg
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup raisins
1 cup chopped walnuts
1 cup sifted powdered sugar
3 tablespoons lemon juice

Process chopped persimmon in a food processor until smooth, stopping once to scrape down sides. Measure 1 cup pulp.  Combine pulp, sugar, oil, and egg, stirring until mixture is smooth.  Combine flour, soda, and cinnamon in a large bowl; add persimmon mixture, stirring until blended. Stir in raisins and walnuts.

Drop dough by rounded teaspoonfuls onto lightly greased baking sheets. Bake at 375° for 9 minutes. Transfer to wire racks placed on wax paper.

Combine powdered sugar and lemon juice, stirring until smooth; drizzle over warm cookies. Cool.  Makes 5 dozen

Persimmon Cookies



INGREDIENTS

    * 2 ripe persimmons, pureed
    * 1 teaspoon baking soda
    * 2 cups all-purpose flour
    * 1/2 teaspoon ground cinnamon
    * 1/2 teaspoon ground cloves
    * 1/2 teaspoon ground nutmeg
    * 1/2 teaspoon salt
    * 1 egg
    * 1 cup white sugar
    * 1/2 cup butter
    * 1 cup raisins
    * 1 cup chopped walnuts

DIRECTIONS

   1. Preheat oven to 350 degrees F (180 degrees C).
   2. Dissolve baking soda in persimmon pulp and set aside.
   3. Sift flour, spices and salt together, set aside.
   4. Cream together butter or margarine and sugar until fluffy, beat in egg and persimmon. Stir in dry ingredients. Stir in nuts and raisins.
   5. Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.

  I found two cookbooks that are put out Independently and cost $4.00 each. One is "Persimmon Recipes", by Dymple. The other is "Old Fashioned Persimmon Recipes".

  While I was checking, I found this recipe for Persimmon Cookies. I have no idea what the cookies are like...I do not even know what a Persimmon is like. Just thought you might want to try it. 

Persimmon Cookies:   Makes: 90 cookies

1 c. persimmon pulp

1 c. nuts

1 c. raisins

1 c. sugar

1/2 c. shortening

1 t. soda, dissolved in pulp

2-1/4 c. flour

1/2 t. cinnamon

1/2 t. ground cloves

1/2 t. nutmeg

1 egg.

1.  Cream shortening and sugar.

2.  Add egg, soda and persimmon pulp.

3.  Add dry ingredients, nuts and raisins.

4.  Drop by teaspoonfuls on to greased cookie sheet.

5.  Bake at 350* for 10 minutes.

A search on Amazon for "persimmon cookbooks" brings up a few titles, such as Persimmons: From Seed to Supper by Jack W. Hazelton and The French-Icarian Persimmon Tree Cookbook by Louise Anderson Lum.  Dried persimmons can be substituted for other fruits in dried food cookbooks such as New Concepts in Dehydrated Food Cookery: Hundreds of New Ideas and Tested Recipes for Enjoying Home Dehydrated Foods by Barbara Densley

Searching for the phrase "persimmon cookies" brings up books with that phrase in it.  At the bottom of each listing, Amazon has the page number where the phrase appears, along with enough of the quote to tell whether it’s a recipe or just a passing comment.  If it’s a recipe you want to read, click on the page number and it will come up on your computer.  I used this method to find the book Specialties of the House: A Country Inn and Bed & Breakfast Cookbook and found a recipe for persimmon cookies on page 78.

Persimmons--dried, fresh, or reconstituted--can be substituted for other kinds of fruit in any recipe, sweet or not.
