Bach? Try Hogwood's 1983, Tafelmusik (Lamon) 1995 and on period instruments, the Boston Baroque's recording 1996

Beethoven? Some peopel like the Perlman recording, some the Zuckerman. Very different styles. It's a matter of taste.

Not sure I would know the best even if I heard it, but my CDs of both came from The Musical Heritage Society. My musical tastes run almost exclusively to Grand Opera. Having a collection of more than a hundred complete operas (many in both CD and DVD formats), I believe, qualifies me as something of a fanatic. If you should want recommendations about opera recordings I might be able to give you some useful information.

Your logo with the horned helmet and golden braids is cute, but not much like the Brunhilde I admire played by Hildegard Behrens in Walkure, Siegfried and Gotterdammerung.
