Her last name was Nelson and she was played my Ann B. Davis.

Quoting from Wikipedia:
[Alice's] last name of Nelson was only mentioned three times: once by a postman delivering a letter informing her that she had won a prize; once by Mike Brady, reading from a trophy of Alice's; and once in the episode "The Elopement", where Carol introduces Alice Nelson by her full name to another maid.
Presumably, she changed her last name to Franklin, Sam the butcher's last name, between the series and the first of the reunion specials when she married him.

According to this Wikipedia article  Alice's last name was Nelson, though when they did the later Brady Bunch reunion specials, she was married to Sam Franklin, and so then it might have been Franklin.
